I wish you get your contract renewed. Having end user experience in any module of SAP doesn't count towards experience as a SAP Consultant or professional.
If the situation is such that you have to learn something new and make your career and you want it to be in SAP then take sometime and see which module you like and have interest in to learn further. Based on your academic qualification FI & CO makes a right combination but there are other factors to be considered such as getting a job quickly and growth prospects in the location where you are.
Since you are already in touch with recruiters, find out what is the module that is in high demand and companies are looking for, it will help you decide what to study.
